- 1 grapefruit
- 8 grams of White Peony white tea
- 1 litre of water
- 4 sprigs of thyme
- Ice cubes
1. Make white tea
White tea is absolutely the best choice for this recipe, because the smooth and flowery aroma perfectly balanced with the grapefruit taste. In addition, it adds a thick texture to the iced tea.
Steep 8 grades of white tea with 1 litre of water at 85ºC (185ºF) for 5 minutes. Afterwards, strain the tea leaves, and let the tea cool down.
Alternatively you may cold brew the white tea. In this case, steep 8 grams of tea in 1 litre of cold water. Store in fridge for 6 hours.
2. Make iced tea
- Cut the grapefruit in thin slices.
- Add ice cubes into 4 glasses.
- Pour white tea and a tea spoon of honey in each glass, and stir.
- Put 2-3 slices of grapefruit into each glass.
- Garnish each glass with 1 sprig of thyme.
