这款来自福建省的白茶由未展开的有着白色茸毛的嫩芽组成,属于中国十大名茶之一。我们的白毫银针茶叶在早春时节的最佳条件下采摘,因此产量非常少。茶叶经过最少的加工(主要是萎凋和晒干),因此嫩芽保持了高浓度的抗氧化剂,同时咖啡因含量非常低。

Western method
Infuse 3 grams of Silver Needle white tea with 500 ml water at a temperature of 80ºC and steep for 1.5 minutes. For a second steep increase the steeping time to 2 minutes
Traditional method
Infuse 5 grams of Silver Needle with 100ml water at 80ºC and steep for 30 seconds. Increase the steeping time by 10 seconds for every next steep.
Cold-brewing
For cold-brewing you may use a bottle, jug, teapot or any brewing vessel that has a lid. Use 10 grams of Silver Needle tea per 500ml of cold water. Cover the brewing vessel with a lid, and store in the fridge for 8-10 hours.

Picking
Tea leaves are hand-picked in the morning.

Withering
The leaves are spread on bamboo mats to wither and dry.

The leaves are dried over low temperatures to further reduce moisture.
Tasted with an oriental infusion, this very fresh tea is characterized by delicate buds that shine with silvery shades at first contact with water, and bloom like a flower at the first infusion, releasing a fresh, almost magical purity into the cup.
The barely noticeable astringency quickly softens, leaving a delicate sweetness and a creamy scent on the palate.
The silver reflections of the buds are gradually replaced by warmer golden tones that characterize the liqueur. With each subsequent infusion, an increasingly intense floral note appears that recalls rose flowers and aromatic herbs but also a light aftertaste of honey. Fruity nuances emerge at the finish, similar to winter melon and pear.

Lots of honey notes. Wonderful clear liquid. LOTS of trichomes. Very good example of a high quality silver needle.
Soft Swiss chard aroma with subtle seaweed undertone.
Brewing: 4g/80ml, 80°C, 30s, +10s.
Warmed-up dry leaves smell like pine needles, due to the perfect combination of chlorophyll and camphor. When wet, notes of green leafy vegetables appear.
The liquor has the same pine needle aroma, completed nicely by wild flowers and grilled vegetables. All in all, it's a spectacular example of what can be done with green teas.
