A Haiwan Old Comrade tea cake made from 3-5 year pre-aged raw pu erh tea leaves. It made from of a blend of leaves from old tea trees at high elevation of 1700m, hence the name ‘Between Clouds’. It offers a clear tea soup with intense honey, flower aroma, and a sweet finish.

How to make this Haiwan Between Clouds pu erh cake?
There are two methods to prepare this mini pu erh tea cake :
Gongfu brewing
Brew 6 gram with 120 ml of water at 95 °C. Apply 10 seconds for the first 4 steeps and add 5 seconds for each next infusion.
Western brewing
Steep 3 gram with 350 ml of water at 95 °C. Apply a brewing time of 2-3 minutes and add 1 minutes for each subsequent infusion.

How this raw pu erh tea is made

Picking
Tea leaves are hand-picked in the morning.

Withering
The leaves are spread on bamboo trays to wither.

Fixation
The withered leaves are heated to halt oxidation.

Rolling
The tea leaves are rolled to release their aroma.

Sun Drying
Rolled leaves are spread on bamboo mats to sun-dry.

Pressing
The processed tea leaves are steamed & compressed.

Packaging
The compressed tea is wrapped in paper & packed in boxes.

Aging
The raw pu erh tea is stored for further aging.
This tea really was a nice surprise for me, given it's a young age for a sheng pu-erh. It has a smooth, soft mouth feel and has some creaminess to it, which I often find in Gushu teas (pu erh tea made from ancient trees). It still has a little bit of astringency, which I actually appreciate in teas, but I have a feeling that if you store this tea and let it ripe for a couple years it will become even more silky and sweet. TEASENZ: Hello Sama, totally agree. Based on what we've experienced so far, many Haiwan brand cakes actually tend to age very well over time. This cake won't be an exception.
